 The area of origin of this superior CRU wine is a small slope in the hills above Vidor, that once belonged to Cavalier Tittoni, an illustrious native Sir. The limestone ground, the orientation of the vineyard and the age of the vnes allow to obtain extreme high quality loose cluster grapes, exceptionally sweet and aromatic. The harvest takes place late in the season, when the grapes are ripe and plump. The primary fermentation and the whole sparkling process are carried out very slowly, allowing natural yeasts to release their characteristic flavour and produce a fragrant and persistent effervescence.  A masterful pairing would be with a sea beam fillet seasoned with pink grapefruit pulp, or tuna tartare with thyme olive oil, but it is a good companion also for white meat or first light courses.
