Production area/Origin of vineyard: Colle Tordera in the Cartizze basin, Municipality of Valdobbiadene.
Size of vineyard: 1 ha
Altitude: 260 m s.l.m.
Type of soil: Clay, sedimentary rock of marine origin particularly present in the Cartizze area.
Slope and location: Hilly area exposed to the south

Training system: Double-arched cane.
Average of vineyard: Vines planted by our great-grandfather Bepi in 1918, after WWI.
Yield: 120 quintals/ha.
Harvesting period: From September 25 to 30.
Vinification Soft pressing and light contact with skins.
Second fermentation: 6 weeks at a temperature of 17°C.

Alcohol: 11,5%
Sugar: 18,5 gr/l

Total acidity 5,7 gr/l
Sulphur dioxide 88 mg/l (max. level allowed in sparkling wine 235 mg/l, max. level allowed in organic sparkling wine 117 mg/l)

Colour: Bright, straw yellow with tinges of green.
Perlage: Persistent, with fine bubbles.
Bouquet: Complex and fine with scents of “abate” pear, lime tree and wisteria flowers and strong and marked almond aroma.
Flavour: Intense, fine and elegant, it recalls the sensation of ripe apple and pear.
Pairing: Short-crust pastry garnished with almonds.
Service: Serve at 8° C
Glass: White wine tulip for better oxygenation.
Storage: Store in a cool, dark place at a constant temperature of 18°C
Fun Facts: 2018 is the 100 year anniversary of this vineyard. The quality of its grapes is like none other.
